Preheat oven to 200°C (390°F).

Toss sweet potato, red onion, and bell pepper with 1 tbsp olive oil, half the salt, pepper, herbs, and paprika in a baking dish.

Rub chicken with remaining olive oil, salt, pepper, herbs, and paprika.

Place chicken on top of vegetables in the baking dish.

Roast for 40-45 minutes until almost done and flip the chicken.

Drizzle soy sauce over chicken and vegetables, then roast for another 5-10 minutes until golden and cooked through.

Serve and enjoy!
Tips
For extra flavor, consider marinating the chicken in soy sauce and spices for a few hours before roasting.
