Ingredients

3 days, 3 hours
4 thick pork steaks, 3 pounds pork shoulder roast
  1. 2large onions
  2. 1 cupred wine vinegar
  3. 1 cupwater
  4. 1 Tbssugar
  5. 1 Tspflaked seasalt
  6. 1 Tspcrushed pepper
  7. 10cloves
  8. 2bay leaves
  9. For the sauce:
  10. 2 Tbsall purpose flour
  11. 2 Tbsolive oil
  12. For ginger snap cookie dough:
  13. 50 gramsbrown sugar
  14. 112 gramsbutter
  15. 1 Tbsmolasses
  16. 1large farm egg
  17. 1 Tspvanilla extract
  18. 140 gramsflour
  19. 1 Tspbaking soda
  20. 1 Tspflaked seasalt
  21. 2 Tspground ginger
  22. 1/2 tspcinnamon
  23. 1/2 Tspcardamon
  24. 4green Granny Smit apples, cored
  25. 4 tspsugar with pinch of cinnamon
  26. Equipment: dough maker, large deep skillet, apple corer, oven or airfryer
  27. Cost: pork $6, gravy 70 cents, apples 80 cents, other 50 cents, per dinner $2

    Cover meat three days with onions, vinegar, water, salt, pepper, sugar, cloves, bay leaves

    Set marinade aside, Pat meat dry. Season with flour, pepper, salt. Fry meat in hot cast iron skillet in hot oil ten minutes to brown on all sides.

    Add 4 cored apples with sugar and cinnamon. Put meat back in marinade, turn heat to low, bake an hour in medium warm oven or air fryer till apples are soft.

    In dough maker: Cream butter, brown sugar, molasses. Add egg, vanilla, flour, baking soda, salt, spices. Make 2 Tbs size cookie dough balls. Mix with gravy and drippings till thick, heat till browned. Pour over meat, serve.

I got certified by the University of California Master Gardener Program in 2005. I try to bring out the original flavor of ingredients, then add layers of spices, herbs and flavorings that enhance, not distort the taste.
