Ingredients

  1. 600 gbeef brisket
  2. 4-5small Potatoes
  3. 1 tbspginger powder
  4. 4 clovesgarlic(finely chopped)
  5. 1 tbspSugar
  6. 5 tbspbeer
  7. 4 tbspsoy sauce
  8. 1 tbspoyster sauce
  9. 2 pcsstar anise
  10. 2 pcsbay leaves
  11. 1 pcCinnamon stick
  12. 2-4 pcsdried chilli
  13. 1 tbspgreen onions (for garnish)
  14. 1 tbspsalt
  15. 2boiled eggs(optional)

Steps

  1. 1

    Blanch the beef:
    Cut the beef Brisket into small pieces, rinse it. Put it and ginger into a pot of cold water, cook for 12mins, Skim off the blood foam and drain the water (Could rinse with hot water after boiling to remove impurities).

    Caramelize the sugar:
    Heat the oil and put 1 spoon sugar, with medium-low heat until the sugar melted and gets slight brown, Turn to high heat add beef to stir-fry until the surface is crispy.

    Add aromatics:
    Add ginger, garlic, bay leaves, star anise, Cinnamon stick into the pan, stir-fry for 1–2 minutes until fragrant.

    Simmer the beef:
    Pour boiling water and 5 spoons beer into the wok until the beef totally soaked in, (or put them into a new casserole), add some dried chillis (2-4pcs), light soy sauce (5 tbsps), oyster sauce (1 tbsp), cover, and simmer for about 1.5 hours. (Do not add salt at this stage to keep the beef tender.)

    Add potatoes:
    Add the potatoes (and hard-boiled egg)to the casserole and continue simmering for another 30 minutes until both beef and potatoes are tender.

    Final seasoning:
    Stir in salt. Cook for another 5 minutes.

  7. 7

    Serve:
    Transfer to a serving dish and sprinkle with chopped green onions. Serve hot with steamed rice or noodles.
