It's one of the most authentic and common Chinese dish, also it's my favorite dish since my childhood, perfectly match with rice or noodles.

It's one of the most authentic and common Chinese dish, also it's my favorite dish since my childhood, perfectly match with rice or noodles.

Blanch the beef:
Cut the beef Brisket into small pieces, rinse it. Put it and ginger into a pot of cold water, cook for 12mins, Skim off the blood foam and drain the water (Could rinse with hot water after boiling to remove impurities). - 2
Caramelize the sugar:
Heat the oil and put 1 spoon sugar, with medium-low heat until the sugar melted and gets slight brown, Turn to high heat add beef to stir-fry until the surface is crispy. - 3
Add aromatics:
Add ginger, garlic, bay leaves, star anise, Cinnamon stick into the pan, stir-fry for 1–2 minutes until fragrant. - 4
Simmer the beef:
Pour boiling water and 5 spoons beer into the wok until the beef totally soaked in, (or put them into a new casserole), add some dried chillis (2-4pcs), light soy sauce (5 tbsps), oyster sauce (1 tbsp), cover, and simmer for about 1.5 hours. (Do not add salt at this stage to keep the beef tender.) - 5
Add potatoes:
Add the potatoes (and hard-boiled egg)to the casserole and continue simmering for another 30 minutes until both beef and potatoes are tender. - 6
Final seasoning:
Stir in salt. Cook for another 5 minutes. - 7
Serve:
Transfer to a serving dish and sprinkle with chopped green onions. Serve hot with steamed rice or noodles.
