This cheesy garlic bread will be made in two parts one is the bread and the other one is the filling and will be made in two different designs. For the dough first we have to bloom the yeast for that in a bowl add warm milk then add sugar and mix it after that add yeast and mix it very well. Mix all the particles well then cover it for 10-15 minutes by this time the yeast will activate and doubles in size. Now add yoghurt, salt and 2 tbsp oil to it and mix well. Combine them all very well.

In a big bowl seive all the wheat flour then add the activated yeast mixture and mix them all very well and combine them all. Once combined add transfer it to the counter top and start kneading it by stretching and folding. At first it will be very sticky but don't add any extra flour keep on kneading the way it is by applying little oil at a time and after 3-4 minutes it will stop sticking. Add it for 13-15 minutes by stretch and fold method. Once done it will be non sticky and smooth.

If you will insert your finger in the dough it will come out clean. You can even do a window test of it for that take a small portion of dough and keep on stretching it slowly if it won't tear up it is perfectly done. Now grease the same bowl with oil and keep the dough in it then cover it so that any air won't get into it. Then cover it with a heavy cloth and keep it in a dark place for proofing. It will take 40-45 minutes to proof in summer and one hour to one and a half hour in winters.

While the dough is proofing lets prepare the filling for that in a soft room temperature butter add the ingredients of the filling in the butter and combine them all very well and keep it aside. Once the dough doubles in size with all the air pockets in it. Then uncover it and punch it knead it for 2-3 minutes then again cover it and allow it to proof at this time it will take only 10 minutes to rise. Then uncover it punch it down again and knead it for 2 minutes then make a big round of it.

Cut it into 2 equal halves cover the one hald and take the other half and roll it into a big round ball then grease your hands flatten it as much as you can then roll it with a rolling pin into a big half inch thick sphere then add the prepared garlic butter on it and spread it. Spread a generous amout of butter so that it makes a thick layer. Then add mozzarella cheese or any cheese of your choice on it. Top it generously then start rolling the dough from one side just like a log.

Roll the dough tight so that no air goes inside. Once it's done then cut the log in 12 equal portions. Adjust them in a oil greased tray and cover it now proof it for the third time. Meanwhile preheat the oven at 180°C for 20 minutes. By that time the swirl buns will be double in size. Then add some coriander leaves, spring onion greens on it and sprinkle some red chilli flakes on top of it and drizzle some oil on it.This is an optional thing you can skip it but it enhance the taste of the bread

Now bake it at 180°C for 25-30 minutes. While this swirl buns are baking let's make the round buns. For that take that half dough make a big round ball of it then cut it into 8 equal parts. Now flatten the rolls separately and spread a generous layer of prepared garlic butter on it followed by mozzarella cheese and then cover it from all over making a round ball just like we make the stuffed parsths. Like so make all the balls and arrange it in the greased baking tray and allow it to proof.

Once proof then add the coriander leaves and spring onion greens on it and sprinkle red chilli flakes then drizzle some oil on top of it. The dough will doubles in size and become just like a flower. By this time our swirl buns are baked and it's time to take it out of the oven. Then immediately cover these baked buns for 10 minutes by this it will become more soft. Now place the flower bun tray in the oven to bake it at 180°C for 25-30 minutes. Now moving to our swirl buns after 10 minutes.

Uncover it scrape the corners demould it and transfer it to the cooling rack and allow it to come on room temperature. Cover it again while it's cooling to make a soft buns. Our soft, cheesy, buttery garlic swirl buns are ready. After 30 minutes take out the flower bun from the oven and do the same process again. Cover it for 10 minutes then uncover it scrape the edges and transfer it on a cooling rack. Allow it to come on room temperature while it's covered. Once cool down enjoy the soft buns.

Tips
Make sure each and every ingredient of the garlic butter is finely chopped and the garlic is finely crushed or chopped but don't add mince garlic and use fresh garlic.
