At a recent workplace chili cookoff, I wanted to make a chili that was a little bit different than the usual. It was early fall and I'd begun to see various jokes and memes regarding pumpkin spice foods, car care products, etc., so I jokingly told a few co-workers that I was going to make pumpkin spice chili for the cookoff. As I thought about it, I started to wonder if I could make it work. This recipe is what I ended up with. While I didn't win, it did place within the top 3 and many people told me they love the unique taste.

Ingredients

6 servings
  • 1large onion finely diced
  • 2 Tbspolive oil
  • 2medium sweet potatoes 1/4 inch dice
  • 1 lbground lamb or ground beef
  • 2 tspnutmeg
  • 2 tspcinnamon
  • 2 tspginger
  • 1 tspclove
  • 1 tspcayenne pepper
  • 1 tspsalt
  • 1 (15 oz)can 100% pumpkin puree
  • 1 (32 oz)carton Pacific red pepper and tomato soup
  • 2 cansbeans (pinto, black, garbanzo, whatever you have)
  • 2Knorr chicken bouillon cubes
  • 3 Tbspchipotle sauce
  • Worcestershire sauce
  • salt

Steps

  1. 1

    Sauté onion in olive oil over medium heat until translucent.

  2. 2

    Add diced sweet potato and continue sauteing until the pieces start to brown.

  3. 3

    Add ground meat, spices and 1 tsp salt and cook until the meat is browned and the lamb juices have mostly been absorbed into the potatoes.

  4. 4

    Add pumpkin puree, red pepper & tomato soup and bouillon cubes. Swirl about 1/2 cup water in the soup carton to get the last bit out and add to the pot.

  5. 5

    Bring to a boil, then lower the heat and simmer for 30-45 minutes or until your patience runs out.

  6. 6

    Add chipotle sauce, Worcestershire sauce and salt to taste during the last 10 minutes of the simmer.

Tips

This could easily be a vegetarian (not vegan) meal by omitting the meat and adding another sweet potato and another can of beans.
