First of all, clean the okra and cut it into large pieces. Make a slit in the middle. Add all the dry spices to it and mix it well..

Heat 2 tablespoons of oil in a pan and sauté the spiced okra on low heat. Keep stirring in between. Switch off the gas when the colour changes (in 5 minutes).

For the masala gravy, heat oil in another pan and add cumin seeds, asafoetida and kasuri methi. Then add onion, garlic and ginger paste and sauté. Add all the spices and tomato puree. After the oil separates add cashews paste. Mix everything, add the sauteed okra, cover and let it cook for 5 to 7 minutes.

Add coriander leaves and remove fromheat.. Restaurant Style Masala bhindi is ready.
