In a non stick pan heat the butter on medium until melted then sprinkle in the flour and quickly combine to make a paste cook for 1 min then add the milk and cream and whisk until combined then use and spatula to keep moving and make sure sauce does not stick to bottom of pan,

Cook slowly until thickens then about 4-5 mins more - you need to taste to make sure all the flour is cooked. Add the salt, pepper and lime juice stir quickly again to combine then taste. I add a little more butter / Cream if too thick.

You can now cover with Cling Film (ontop of the sauce) to stop a "skin" forming then quickly heat when ready to use. AMAZING - Enjoy :P
