This is a traditional recipe which I learnt from my MIL.
It's easy, tasty and made in one thick bottomed vessel(tope, tapeli, patila)

Steps

First ready ingredients. Wash and soak tur dal in water for 30 minutes.

Crush til and groundnuts in mixer. Add in all the masalas and crush again. Take in a big plate.

Mix the crushed powder with fresh coconut, methi leaves, coriander and oil and prepare the Stuffing Masala. Taste and adjust ingredients as needed.

Wash and peel the vegetables. Give a slit and fill in the stuffing masala. Keep ready. Now do the tempering. Take ghee in a thick bottomed vessel. Add in rai and othe tempering ingredients. Drain the water from soaked tur dal and add the dal into the tempering. Mix.

Add salt,haldi and 3 cups water into the dal. Bring to boil. Cover and cook for 7 minutes.

Meanwhile, wash rice and soak them for 5 minutes. Drain off the water and mix salt, haldi and ginger-chilli paste in the soaked and drained rice. Mix. Stir dal in between. Open lid and add in all the stuffed vegetables.

Add in the green peas. Now add in the rice.

Add 1 1/2 cups of water. Cover lid and keep some water on the lid. Cook for 3 minutes. Now add in the remaining masala.

Cover and continue cooking. Open lid after 4 minutes and gently stir. Add in hot water in the lid if required. Keep gas flame medium to slow throughout the process.

Switch off gas once the potatoes and rice are done. Keep lid covered for 10 minutes for the EK TOPE to settle down. Open the lid and serve. Garnish with fresh coriander and grated coconut. I have served EK TOPE with kadhi and papad. Enjoy traditional recipe with family and friends. Happy Cooking ☺!!
Tips
1. Use dry, non-oily tur dal for best result.
2.The water kept on the lid gets heated in the cooking process and this hot water can be added into the recipe when required. This way the taste is not hampered. If we add plain water in between the process the taste gets affected.
