Ingredients

  1. 300 gramsbig fresh amla
  2. 12green spicy chillies
  3. 1 tablespoon coriander seeds
  4. 1 tablespoon mustard seeds
  5. 1 tablespoon mustard dal
  6. 1 tspoon Fenugreek seeds
  7. 1 tspoon fennel seeds
  8. 1 tablespoon chilli powder
  9. 1/2 tspoonturmeric powder
  10. 1/2 tspoon asafoetida
  11. 200 ml mustard oil
  12. Salt

Steps

  1. 1

    Wash, wipe and steam amla for six minutes till broken by hands.cool.

    Heat a pan add coriander seeds, mustard seeds, fennel seeds, Fenugreek seeds and roast for five minutes in a slow flame.Keep aside.Cut chillies into big pieces.

    Add roasted items in mixer jar.Grind coarsely.

    Remove seeds from amla and make petals seprate.

    Heat mustard oil in a pan till smoking point.Turn off' the gas.Cool.

    In a mixing bowl add amla pieces, grounded masala, chilli powder, turmeric powder,salt, asafoetida, chilli pieces and mustard oil.Mix well.

    Store in a dry glass bottle.Use after 2-3 days.Our tasty, nutritious amla pickle is ready to serve.
