Keep ready all ingredients handy. Washed, chopped and grated.

Heat oil in a pan. Add mustard seeds and let them splutter. Add hing, green chili, and curry leaves. Sauté briefly.

Add chopped onion and sauté until transparent. Add carrot and beetroot. Sauté for 2 minutes.

Add salt, turmeric, red chili, and coriander-jeera powder. Mix well. Cover and cook on low heat until veggies are tender.

Add grated coconut, stir well, and turn off the heat. Garnish with fresh coriander and a squeeze of lemon if desired.

Tips
