Ingredients

  1. 1/2 cupRaw mung beans
  2. 2 1/2 cupsWater
  3. 1 tsp(divided) Salt
  4. 3/4 tsp(divided) Turmeric powder
  5. 1/2 cupCurd (plain yogurt)
  6. 1 tbspChana flour (besan)
  7. 2 tbsp(divided) Ghee or oil
  8. 1/2 tspCumin seeds
  9. 1/8 tspAsafoetida powder
  10. 10 leavesCurry leaves
  11. 1 tspGreen chilli paste
  12. 1/2 tspGinger paste
  13. 1/2 tspRed chilli powder
  14. 1 tbspChopped coriander leaves

Steps

    Soak mung beans overnight. Drain. Cook mung with 2½ cups water, ½ tsp salt, ½ tsp turmeric until soft. Set aside.

    In a bowl, whisk curd, chana flour, ¼ tsp turmeric, ½ tsp salt. Set aside.

    Heat 1 tbsp ghee or oil in a pan. Add cumin, asafoetida, curry leaves, green chilli paste, ginger paste. Add curd mixture. Stir and bring to a boil.

    Add cooked mung. Mix and simmer until curry-like consistency. Transfer to a serving bowl.

    For tempering, heat 1 tbsp ghee or oil, add red chilli powder, pour over mung curry. Garnish with coriander leaves.

Tips

Be careful with the amount of water while cooking mung; if you use too much, you may need to drain it later.
