Boil green peas, potato, bottle gourd, capsicum, and carrot in a pressure cooker for 3 whistles.

Blend or mash the boiled vegetables until smooth.

Puree tomato, beetroot, ginger, and green chillies together.

Chop onion and sauté in butter until translucent.

Add the tomato-beetroot puree and cook for 5-10 minutes.

Add pav bhaji masala, coriander powder, red chilli powder, turmeric, kanda lehsun masala, and cheese slices. Mix well until cheese melts.

Add the blended or mashed vegetables to the onion-tomato mixture and mix thoroughly.Cook for 5 minutes, stirring well.

Serve hot bhaji with buttered pav, top with grated cheese, chopped coriander, and chopped onions.
Tips
For an extra touch, serve with a side of chopped onions
