Apple cranberry carrot salad

Some salads just feel like sunshine in a bowl, and this Apple Cranberry Carrot Salad is exactly that—crunchy, bright, sweet, tangy, and honestly so refreshing you’ll wonder why you don’t make it every week. It’s one of those throw-together recipes that look fancy without any actual effort. Perfect for lunch boxes, BBQ sides, potlucks, or those days when you’re trying to “eat healthier” but still want something fun.
The base is simple: crisp apples, juicy carrots, a handful of cranberries for that sweet-tart pop, and a dressing that ties everything together with just the right balance. You don’t need any exotic ingredients—everything is probably already sitting in your kitchen.
It’s crunchy. It’s juicy. It’s sweet with just the right tart contrast. And honestly, it tastes like fall and spring had a cute little salad baby. Plus, it’s kid-friendly, lunch-box friendly, and meal-prep friendly.
Make it once and it’ll become a regular on your table. Enjoy!
