I absolutely love the buns made in Enugu and any chance I get to I’m getting one. Well.. who are we kidding more like 2 or 3 🤭 I have come up with a very delightful and fluffy bun my way …
Steps

Put flour in a bowl with salt, cinnamon, nutmeg,turmeric, 5spice.

Mix it around …

Add sugar, yeast, baking powder

Add milk powder stir it around. Add the butter and mix it with your fingers (clean) or you can cut it with a knife until it’s a little bit crumbly.

Make a well in the center and add the egg that’s been beaten with a fork. Next add the warm water.

Mix with you hand until it is no longer sticky and then knead for 5 minutes and cover. Rest for 20 minutes.

Knead again for 3 minutes and cover and rest for 5 minutes. Cut it in half and each half into four.

We should have 8 but feel free to make yours smaller. Get a pot and pour enough oil to cover and I used soybean but use your preferred oil. Turn the flame to a medium and cover until it gets hot and turn it down just a little.

Add your dough balls and it’s important they fry slowly so they cook thoroughly. They should take about 5-6 minutes. If they’re turning brown too fast turn your heat down. It should be a gradual browning. Make sure to turn and when they reach a golden brown take them out and put into a strainer to drain off oil or on paper towels.

Tips
I want to explain about forming the balls. Take each piece of dough you cut and take a corner and fold it into the middle. Do this with each corner (as if it’s a square) until it forms a smooth ball. Then turn upside down and with your other hand (the palm) put on the side of the ball and rotate it towards your thumb a few times and the bottom should be smooth. Now your ready to fry 😊
