Pickle is a tongue tickling condiment without which most of the Indian food is incomplete. There are endless varieties of pickles in India and almost in every house .As far as this recipe of gajar, muli aur hari mirchi ka achaar is concerned, this is made with very basic ingredients and easy process.the given post is about the instant version of making pickle. Here, you neither need to dry the vegetables (carrot, radish and green chilies here) for days together nor have to keep the pickle jar under the Sun. Just wash, cut, make pickle and start eating ,simple.

Steps

First, wash and dry the carrots, radishes, and chilies. Now peel the carrots and radishes and cut them into long slits. Also cut the chilies into long slits. (as shown in photo)

Now dry roast the mustard, cumin, fennel and fenugreek seeds on a pan. Roast them till the moisture is released. Now take them in a mixer jar and grind them coarsely.

Heat oil in a pan and add asafoetida and turmeric. then add chopped carrots, radish and chillies and turn off the heat.

Now add coarsely grinded mixture, red chilli powder, salt and mix it properly. when it cools down, take it out in a bowl or jar.

Instant pickle of carrot radish and green chili is ready. It can be served as side dish.
Tips
if you want to store this pickle for 3 to 4 week, you can add 1 tablespoon of vinegar and keep it in refrigerator.
