Ingredients

1 hr 30 mins (Prep: 20 mins, Cook: 1 hr 10 mins)
4-5 people
  • 300 gcassava leaves, finely chopped
  • 300 gpork, cubed
  • 1onion, chopped
  • 2 tbspvegetable oil
  • 2tomatoes, chopped
  • Salt & pepper

Steps

1 hr 30 mins (Prep: 20 mins, Cook: 1 hr 10 mins)

    Heat oil, sauté onion and pork until browned.

  2. 2

    Add tomatoes and cassava leaves. Stir well.

  3. 3

    Cover, add a little water, simmer 1 hr until pork is tender.

  4. 4

    Season to taste.

Tips

Cook slowly to prevent leaves from becoming bitter.
