  • 4potatoes
  • 2small onions
  • 1leek
  • 1 packetbacon or serrano ham strips
  • 1 small potnatural yoghurt
  • 1 tsporegano
  • 50 gparmesan cheese

Steps

  1. 1

    Put the potatoes in the oven, quite high (200ºC/400°F) having washed them very well and make a cut around the edge so that it's easy to cut them open once they're done

    Sauté the onions in a little olive oil

    Add the bacon or ham and the finely shredded leek, stir and leave for about 5 minutes. Turn off the heat

    Add the yoghurt and oregano and mix well

    Put the mixture into a mixing bowl

    Grate the cheese and add to the bowl

    When the potatoes are ready, turn the oven down to 150º, cut the potatoes into halves and empty them...

    ... putting the hot potato flesh directly on top of the cheese so that it starts to melt because of the heat

    Mix really well, and add a good amount of freshly ground black pepper

    Fill the potato skins and place on top of a sheet of kitchen paper on the oven tray and put in the oven for 15 minutes

    Just before the 15 minutes are up, turn the grill on high to toast the tops a little. ¡Enjoy!

Born in the UK, I came to Spain after graduating many moons and meals ago, and I'm still here. For me cooking is a great way to unwind at the end of the day. My recipes tend to be quite quick and simple and (mostly!!) healthy too. Also quite seasonal - I prefer buying fresh local produce as much as possible. When I have time, I love spending a few hours cooking, filling my kitchen with delicious smells and great music and then hosting family and friends for long happy meals, laughs, conversation and chilled white wine. I'm a great believer in the power and value of home cooking for our own health, happiness and wellbeing and those of our loved ones and since I joined the Cookpad team 11 years ago I am committed to helping to make everyday cooking more fun for people all over the World.
