Crunchy Fried Chicken with Lemon and Ginger

Breadcrumbed chicken fillets has always been a firm favorite in my home - my family love them hot, freshly fried, or cold the next day. When my son came home from a school trip a few weeks ago I promised him his favorite dish, but then when I got back from work, realized I had no bread to blitz. So I used some corn crackers instead, and the result was delicious. Just as nice as breadcrumbs, and a lot crunchier.

Beat the eggs and add the grated ginger and lemon zest into the mixture. Add a pinch of salt and mix well.

Blitz the corn crackers.

Dip the chicken fillets in the beaten egg, ginger and lemon mixture.

And then coat them in the corn cracker crumbs.

Fry in a shallow pan over a strong heat.

Place on kitchen roll to absorb excess oil.

Serve with a nice healthy fresh salad. Enjoy!
