Steps

Preheat oven to 180°C. Grease a muffin tin.

Rub butter into flour, add sugar, egg yolk, and water to form a dough.

Roll out dough and cut circles. Line muffin tin with pastry.

Place 1 tsp apricot jam in each pastry case.

Mix coconut, sugar, and egg whites for topping.

Spoon coconut mixture over jam.

Bake for 20 minutes until golden.
Tips
For a twist, try using different fruit jams or adding a sprinkle of nuts on top.
