Wash and chop brinjles, sprinkle with salt, let sit 15 min in a slotted bowl, set on a dish, then rinse and drain.

Sauté onions in oil until translucent on medium heat..

Add capsicum and cumin, stir briefly.

Add tomato puree, curry powder, Royco cube, and brinjles.

Cook on high heat for 2 to 3 mins, stirring until combined.

Lower heat, cover, and cook 10 min, stirring halfway, adding water if dry. I let my food rest for another ten minutes without heat before serving it.

Serve hot, and squeeze fresh lime over the top for a zing.
Tips
Salt the brinjles to reduce bitterness and sauté onions until translucent for the best flavor.
