Lussekatter- A Swedish Bun

This new year I have learnt a new recipe from a new cuisine.
Lussekatter, also known as St Lucia bun, is a popular Swedish saffron bun, which is a rich, spiced yeast-leavened sweet bun that is flavoured with saffron and contains dried fruit including currants and raisins similar to a teacake.

Lussekatter, also known as St Lucia bun, is a popular Swedish saffron bun, which is a rich, spiced yeast-leavened sweet bun that is flavoured with saffron and contains dried fruit including currants and raisins similar to a teacake.

Start by grounding saffron and sugar in a mixer jar.

Then transfer into a mixing bowl and mix with the water.

Set aside for at least 30 minutes.

Add yeast and milk and mix well.

Add butter and mix again, trying to mash up the butter pieces.

Start adding the flour. Add a bit at a time until it is all mixed in. When it's getting hard using a spoon to mix, start using your hands instead. When all the flour is added, start kneading the dough. Knead for at least 10 minutes, or longer if you can.

Once done, cover with a kitchen towel and set aside to rise for 60 minutes. After 60 minutes, check to see if the dough has risen sufficiently. When the dough has risen, divide into 9 equal pieces.

Make a log from dóugh pieces and fold them in 'S' letter shape.

Transfer in a greased baking tray and put raisins on both top and bottom. Set aside for 20 minutes.

Sprinkle sesame seeds and brush butter and milk on buns.

Bake in the middle of the oven for 20 minutes, or until golden.

Brush butter again and then remove from baking tray and place on a cooling rack or kitchen towel to cool.
Tips
After bake, brush butter immediately on buns.
