The first step is to soak the dried fruits as we are making a non alcoholic version soak the dried fruits in orange juice for a minimum of 24 hours. The more you soak the fruits the better the cake will taste. Just remember to keep in the refrigerator else it will rotten. The quantity and the dried fruits are mentioned above in the ingredients section. You can use as many dried fruits you want and you can take less or more as per your taste. You can use both the canned juice or the fresh one.

I'm making black jack in place of molasses but if you got your hand on molasses use 3 tbsp of that. For making black jack in a thick bottom pan add the sugar and caramelise it. Then add the jaggery to it and melt it the mixute will get foamy. Stir continuously else it will burn. Cook until it gets a black colour. Be very careful while making it's way too hot and splutter a lot. Make sure the flame is on low from beginning till end.Once get the perfect colour off the flame and after a minute or 2

After that add little water at a time and mix. You may or may not need 200 ml water. Add only that much which is required. Add water till the mixture dissolves properly and liquidity. Now agsin on the flame and cook it on low flame till it gets sticky and thick. Immediately off the flame as it will get thicker once cool down. Our black is ready use 50 gram or 3 tbsp of it to the cake. Now after 24 hours take out the soaked dried fruits from the refrigerator and seive it to take out the liquid.

From the dried fruits. Now in a big bowl add the butter which is on room temperature and start to whisk either by electric beater or manually. Once get fluffy and light in colour add the sugar and beat again till it's pale in colour and get a cream like texture. Then crack the eggs one by one to it. One egg then beat again the egg and beat like so add all the eggs. Now our wet ingredients are ready keep it aside and in other bowl mix the dry ingredients.

Seive all-purpose flour with all the dried ingredients mentioned above in the ingredients section. Once done mix them well now add the lemon zest and the wet dried fruits and the chopped dry fruits to it and combine well. By doing this process the dried fruits will distribute all over the cake and not settle down while baking. You can even use half of lemon zest and half of orange zest. Once everything is combined well start adding it to the wet Ingredients in batches add it in 3 batches.

Use a thin edge spatula to mix the dry and wet ingredients.Simply cut and fold the wet and dry ingredients while mixing. Don't over mix it just combine till everything is mixed well. Now preheat the oven at 160°C for 15 minutes. On the other side grease an 8 inch baking dish and line it with butter paper or parchment paper and pour the batter in it. Make sure the batter is in between pouring and dropping consistency. Once done tap it 4-5 times to take out all the excess air from the batter.

Now top it with some nuts and berries of your choice. This step is optional but it gives a bakery like look and tastes better. Now keep it in the preheated oven at 160°C for 1 hour to 1 hour and 15 minutes depending on your oven. My oven takes 70 minutes that is 1 hour 10 minutes check on yours. Once it's done check it with a knife or toothpick to see whether it's completely done. When done take out from the oven cover it and keep it as it is for 30 minutes.

This will make the cake tastes more delicious with perfect texture. After 30 minutes demould it and dust some powdered sugar on it. Cut it into pieces and serve warm. If you like your plum cake hot or warm you can microwave it for 15 second and it will taste like freshly bake everytime. You can store this cake on room temperature for 3-4 days in winters. In other season keep it in the refrigerator. Follow every step of the recipe to make a perfect plum cake everytime.
