Ingredients

12 muffins
  • 190 g (1 1/2 cups)All-purpose flour
  • 150 g (3/4 cup)Sugar
  • 2 tspBaking powder
  • 1/4 tspSalt
  • 120 ml (1/2 cup)Milk or buttermilk
  • 80 ml (1/3 cup)Vegetable oil or melted butter
  • 1large Egg
  • 1 tspVanilla essence
  • 1 1/2 cupsBlueberries (fresh or frozen)
  • For streusal: 60g (½ cup) Flour
  • 50 g (1/4 cup)Brown sugar or white sugar
  • 1/2 tspCinnamon (optional)
  • 3 tbspCold butter, cubed

Steps

  1. 1

    Make a streusel: In a bowl, mix flour, sugar, and cinnamon for streusel. Rub in cold butter until crumbly. Chill.

  2. 2

    Preheat oven to 180°C. Line muffin tray. Mix flour, sugar, baking powder, and salt.

  3. 3

    Prepare muffin batter: Whisk milk, oil/butter, egg, and vanilla. Fold wet into dry ingredients gently.

  4. 4

    Toss blueberries in 1 tsp flour. Fold into batter.

  5. 5

    Fill muffin cups ¾ full. Top with streusel.

  6. 6

    Bake 20–25 min until golden and a toothpick comes out clean. Cool 5 min, then transfer to rack.

Tips

Tossing the blueberries in flour helps prevent them from sinking in the batter.
