This is actually a salad dressing. It is absolutely delicious - perfectly balanced tangy and sweet taste. Can replace mayonnaise easily.

Steps

Soak cashew for 6 hours. If it may take longer than 6 hours, keep it in the refrigerator. Blend the soaked cashews until smooth.

Add lemon juice, garlic, soaked dates, black pepper, and salt.

Blend again until creamy and well combined. Add a little water if you need to make it spread like consistency.

Taste and adjust salt or lemon juice if needed.

Use this as a potato and vegetable salad dressing or as a dip with chips. I would love to enjoy it alone too!
Tips
Adjust the amount of lemon juice for more tanginess or add more dates for sweetness.
