Paneer Pulao

Paneer Pulao is a delicious one pot rice dish that can be made within 30 minutes. It is a main course meal that is made by lightly frying paneer cubes until lightly browned and cooking them with rice and other ingredients. More vegetables may be added to make it more wholesome but optional.

Rinse rice and soak it for 10 minutes. Meanwhile cut paneer into cubes or triangle and soak them in warm water for 15 minutes to keep them soft and moist. After that drain water completely and smear 1/2 tsp salt, black pepper powder and 1 tbsp oil.Heat 1 tbsp oil in a pan and fry cashewnuts till golden brown. Set aside.In the remaining oil, add 2 tbsp ghee and 1 tbsp oil.Sprinkle half crushed whole garam masala and bay leaf.

When they splutter, add sliced onion and 1 chopped green chilli.Saute until golden brown. Reserve some fried onion for garnishing.Now add 1 tablespoon ginger paste, 1 tsp homemade garam masala and saute.Now add green peas and saute for a minute. Now add the rice, salt and sugar to taste and toss to mix well.Remove the rice to pressure cooker and pour 3 cups water.Pressure cook on high flame till 2 whistles.Release steam after 5 minutes.

When the rice is cooking,heat oil or ghee in a non-stick frying pan and pan fry paneer to light golden brown. Add them to the cooked rice and gently mix in the rice.Cover and allow a standing time of 5 minutes. Serve hot garnished with crispy fried onions and raita of choice.
Tips
Soaking paneer in warm water before cooking is essential to keep them soft and moist. Adding them to the rice at the end prevents them from breaking.
