As the winter bug has stricken me, these warm Apple Pie Pancakes really hit the spot without hurting my throat. Whether you're sick or well, these tasty pancakes are a great breakfast staple. #february2027

Set out egg and milk to reach room temperature. Shred apples and set aside. Melt butter and set aside.

In a medium mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, cinnamon-sugar, and apple pie spice. Create a well in the center of dry ingredients.

In the well, pour in the milk, melted butter, and egg. Whisk until completely combined.

Once fully combined, add in the shredded apple and mix until fully incorporated and smooth.

In a flat skillet, spray with canola oil and ladle some of the batter into the center of the pan, allowing the mixture to spread into a pancake shape. Spray pan between making each pancake.

Allow to cook through on each side, about one minute per side or when bubbles pop and the pancake feels firm.
