I was inspired to cook this dish after visiting a local farmers market and seeing all the fresh vegetables. I love experimenting with different spice blends. What makes it special is the vibrant colours and the combination of textures. I enjoy eating it with beef stew and avocado.

I was inspired to cook this dish after visiting a local farmers market and seeing all the fresh vegetables. I love experimenting with different spice blends. What makes it special is the vibrant colours and the combination of textures. I enjoy eating it with beef stew and avocado.

Boil rice until almost cooked, then drain and set aside.

Heat oil in a pan, add onions, carrots, bell peppers, cabbage, minji and mishiri. Stir-fry for 3 minutes.

Add black pepper, turmeric, paprika, curry powder, salt, beef cubes, and Royco. Mix well.

Add the boiled rice and soy sauce. Stir to combine.

Cover and steam on low heat for 5 minutes until flavors blend.
Tips
For extra flavor, you can add a splash of sesame oil or garnish with green onions before serving.
