Mix the kadayıf evenly with the melted unsalted butter, then toast it in a pan over low heat until lightly golden.

Add the pistachio paste and melted white couverture chocolate, and mix until well combined.

Scoop portions using an ice cream scoop and place them in the freezer for 5 minutes.

Slightly soften with the warmth of your hands and shape into round balls.

Sift the cocoa powder and skim milk powder together and set aside.

Mix the starch syrup (or oligosaccharide) with water and set aside.

In a non-stick pan, melt the unsalted butter, then slowly melt the marshmallows over low heat while stirring gently.

Turn off the heat and mix in the cocoa–milk powder mixture.

Add the syrup mixture and stir evenly using the residual heat.

Portion the chocolate marshmallow into small rounds.

Flatten each piece, place a round pistachio kadayıf filling in the center, sprinkle lightly with Maldon salt, then wrap and shape into a smooth ball, like a dumpling.
