Blanch spinach, then blend with green chili, ginger, and 4 garlic cloves to make a puree.

Heat oil, add cumin seeds, then sauté onion and chopped garlic until soft.

Add besan and fry until the raw smell disappears.

Add coriander powder, cumin powder, red chili powder, garam masala, kasuri methi, salt, and sugar. Mix well.

Add spinach puree, cook and mix everything well. Add lemon juice and turn off the flame.

For tadka: Heat butter and oil, fry chopped garlic and dried red chili until golden.

Pour tadka over the palak. Serve hot with rice, roti, or naan.
Tips
Adjust the spice level by adding more or less green chili and red chili powder according to your taste.
