Masala milk tea with spring onion pakoda

Masala milk tea:-using a mortar and pestle,coursely crush the ginger, cardamom and cinnamon.

In a saucepan, bring 1cup of water to a boil,Add crushed spices and ginger.Simer for 2-3 minutes until the water is fragrant.Add 2tsp tea powder and sugar to taste.Boil for1-2minutes,depending on how strong you like it.

Pour in 1cup of milk.Bring the mixture to a boil.Reduce the heat and let it simmer for 2minutes to achieve a rich colour and flavour.Turn off the heat and pour the tea through a strainer into cups.Masala milk tea is ready.Serve hot with spring onion pakoda.

Spring onion pakoda:-In a large bowl,add sliced onions, green chilli,salt, spring onion turmeric powder mix well squeezing the onions with your hands to release their moisture,and set aside for 10 minutes.

Add the besan the onion moisture should be enough to bind.If it feels too dry.Add just 1-2 tsp of water.But keep the mixture very thick and tight.2tsp of the hot frying oil into the batter and mix quickly.This makes them extycripsy.Heat oil in a heavy -bottomed kadai(pan)over medium -high heat.Once the oil is hot,take a small portion of the mixture and drop it.

Spring onion pakoda is ready.Serve with Masala milk tea.
