Egg Masala Fry—also known as Anda Bhurji or Bejha Masala.is one of those recipes that doesn’t need measuring cups or perfection. Just onions sizzling in oil, the smell of ginger and garlic waking you up, and eggs scrambling softly into a spicy masala. Simple food, but deeply satisfying.

Whisk the eggs with a pinch of salt, chilli flakes and 1 tablespoon cilantro. set aside.

Heat oil in a saucepan and add cumin seeds. Allow to sizzle.

Add onions and sauté till soft and translucent.

Add the spices and cook with a splash of water for 2 minutes.

Add ginger-garlic paste and cook for another 2 minutes.

Add tomato puree and cook till oil separates.

Add water and cook till bubbling and oil is released.

Add the whisked eggs and allow to set for a few minutes before mixing to scramble. Cook till eggs are cooked through.

Add the sliced eggs, green chillies and cilantro. Mix and cover and cook on low flame for 2-3 minutes.

Serve hot with paratha, roti.
