There’s something very special about suhoor. The house is quiet, the sky is still dark, and you’re cooking half-asleep, half-praying that whatever you make will keep you full till iftar. Suhoor needs to be simple but strong—something that keeps you full, energized.
Egg Masala Fry—also known as Anda Bhurji or Bejha Masala.is one of those recipes that doesn’t need measuring cups or perfection. Just onions sizzling in oil, the smell of ginger and garlic waking you up, and eggs scrambling softly into a spicy masala. Simple food, but deeply satisfying.
Eggs are my suhoor hero. They’re filling, gentle on the stomach, and don’t leave you feeling heavy or thirsty later in the day. This masala version adds just enough spice to make the meal enjoyable—without going overboard when you know you won’t be drinking water for hours.
It’s quick, comforting, and honestly feels like a warm hug at 4 a.m.

Ingredients

  1. 3eggs, boiled, sliced
  2. 3eggs
  3. To taste, salt
  4. 1/4 tsp.chilli flakes
  5. 1/2 cupoil
  6. 1 tsp.cumin seeds
  7. 1/2 cuponion, chopped
  8. 1 1/2 tsp.coriander powder
  9. 1 tsp.Kashmiri chilli powder
  10. 1/4 tsp.turmeric
  11. 1/2 tsp.cumin powder
  12. 1 tsp.ginger-garlic paste
  13. 2tomatoes, pureed
  14. 1/4 cupwater
  15. As required, cilantro, chopped
  16. 2green chillies slit

Steps

    Whisk the eggs with a pinch of salt, chilli flakes and 1 tablespoon cilantro. set aside.

    Heat oil in a saucepan and add cumin seeds. Allow to sizzle.

  3. 3

    Add onions and sauté till soft and translucent.

  4. 4

    Add the spices and cook with a splash of water for 2 minutes.

  5. 5

    Add ginger-garlic paste and cook for another 2 minutes.

  6. 6

    Add tomato puree and cook till oil separates.

  7. 7

    Add water and cook till bubbling and oil is released.

  8. 8

    Add the whisked eggs and allow to set for a few minutes before mixing to scramble. Cook till eggs are cooked through.

    Add the sliced eggs, green chillies and cilantro. Mix and cover and cook on low flame for 2-3 minutes.

    Serve hot with paratha, roti.
