Ingredients

  • Potatoes
  • 2 lbsbaby potatoes (cut into 1 inch chunks)
  • 55 g(2 oz), crumbled Feta cheese
  • 15 ml(1 tbsp), chopped Additional fresh dill
  • 30 ml(2 tbsp), chopped Flat leaf parsley
  • from 1/2 lemon Lemon juice
  • 5 ml (1 tsp)Lemon zest
  • to taste Freshly ground black pepper
  • 30 ml (2 tbsp)Additional olive oil (for potatoes)
  • Meatballs
  • 450 g (1 lb)Ground turkey
  • 30 ml (2 tbsp)Olive oil
  • 2.5 ml (1/2 tsp)Pepper
  • 5 ml (1 tsp)Salt
  • 7 ml (1/2 tbsp)Dried oregano
  • 30 ml(1/4 cup), chopped Fresh dill
  • 60 ml (1/2 cup)Breadcrumbs or almond flour
  • 1Egg
  • 1/4large, finely chopped or grated Red onion
  • 2cloves, minced Garlic
  • 1 tspcrushed red pepper flakes (optional if you want some extra heat)
  • Toppings
  • Sliced cucumber (to taste)
  • Tzatziki or dill yogurt sauce (to taste)
  • Extra feta (to taste)

Steps

    Preheat oven to 425°F (220°C). Toss potatoes with olive oil, oregano, salt, and pepper. Spread on a baking sheet.

    Roast potatoes for 20 minutes. Toss, then roast 10 more minutes. Add garlic, roast 3-5 minutes until tender.

    Remove potatoes, drizzle with lemon juice, sprinkle lemon zest, parsley, dill, and feta.

    In a bowl, combine turkey, garlic, onion, egg, breadcrumbs, dill, oregano, salt, and pepper. Mix until just combined.

    Form into approximately 14 meatballs (will vary depending on size).

    Heat olive oil in a pan over medium heat. Cook meatballs 7-8 minutes, turning to brown all sides, until internal temp is 165°F (74°C). Alternatively, cook in the air fryer for 10 minutes at 400° (204°C).

    Serve meatballs over potatoes with sliced cucumber and a dollop of tzatziki or dill yogurt sauce.

Tips

For extra flavor, consider adding a pinch of red pepper flakes to the meatball mixture or using fresh herbs in the potato mix.
