Ingredients

2hrs(including rise)
4-6 people
  • 2 cupsall-purpose flour
  • 2 teaspoonsinstant yeast
  • 1/4 cupsugar (adjust to taste)
  • Pinchif salt
  • 1 1/4 cupswarm water (not hot)
  • ½ teaspoon vanilla essence (optional but tasty)
  • Enough oil for deep frying

Steps

    In a bowl, mix flour, sugar, salt, and yeast.

    Gradually add warm water while stirring to form a smooth, thick batter (not dough, slightly sticky).

    Add vanilla essence and mix well.

  4. 4

    Cover the bowl with a clean cloth and let it rise in a warm place for 1–2 hours until bubbly and doubled in size.

    Heat oil in a deep pan on medium heat (not too hot).

  6. 6

    Scoop small portions of the batter using your hand or spoon and gently drop into the oil.

    Fry, turning occasionally, until golden brown on all sides.

    Remove and place on paper towels to drain excess oil.

Tips

Use warm (baby-bath temperature) water to activate yeast properly.
Add a pinch of nutmeg for a richer flavor.
Don’t make the oil too hot or they will brown outside and stay raw inside.
Let the batter rise fully — this is the secret to soft, airy puff balls.
Sprinkle powdered sugar or cinnamon sugar after frying for extra sweetness.
For a softer texture, avoid adding too much flour; the batter should be slightly sticky.
