Banana Cake w/ Cookie Butter Icing

I go back and forth on what flour to use when I make cakes. I used regular flour for this cake, it was a bit too dense for my liking, I’d use cake flour next time for a lighter cake.

I go back and forth on what flour to use when I make cakes. I used regular flour for this cake, it was a bit too dense for my liking, I’d use cake flour next time for a lighter cake.

Start off with browning your butter in a saucepan over medium heat. Stir often for about 7 minutes or until butter is toasty.

Preheat oven to 350 degrees

Combine your wet ingredients and give a gentle whisk (eggs, brown sugar, cooled brown butter, mashed bananas, & vanilla)

Combine your dry ingredients and give a gentle whisk (flour, sugar, milk, baking powder, ginger, cinnamon, nutmeg, clove, & salt)

Marry the wet with dry and mix until just combined. Pour into the 8 in circle cake pan

Bake for minutes & let cool completely

While cake is baking make the icing. Beat room temperature mascarpone on medium. Add in cookie butter and heavy cream. Beat until soft peaks form. Hand whisk in powdered sugar.

Ice cake and top with flaky salt.
Tips
I will come back and update this, I can't make her a little softer!
