Collards

Collards are very delicious when prepared right. Tenderness of the collards vary due to weather in which it grew, age of leaves before picking and how of time passed between picking and cooking. It's always good to pick only after first frost. They become less bitter after that. Sometimes the collards have awesome flavor but are very tuff.

Collards are very delicious when prepared right. Tenderness of the collards vary due to weather in which it grew, age of leaves before picking and how of time passed between picking and cooking. It's always good to pick only after first frost. They become less bitter after that. Sometimes the collards have awesome flavor but are very tuff.
Steps

Look over and wash the leaves. Remove thick stems.

Add bacon drippings

In a pot add salt, sugar, 2 cups water and vinegar.

Put on to heat. Add bacon and bring to boil
- 5
When the broth is boiling good add the collards. This allows the greens to shrink and fit in the pot faster.

Stir every 20 minutes don't allow them to clump up

After 1-1/2 hours mix the remaining sugar with water and add to the collards. Keep adding water as needed. I think I used a gallon or more total.

Add the rest of the seasonings stir well

After 2-1/2 hours I was done. Serve I hope you enjoy!
