Ingredients

  • 3Cobs of corn
  • 1/2 CupSemi dried tomatoes
  • 1/4 Cupchopped coriander
  • 3eggs
  • to tasteSea salt and pepper
  • 1/2-1 tablespoonpesto
  • 1/2 Cupshredded parmesan
  • 1 teaspooncrushed garlic
  • 1/4 CupSR Flour
  • 1 Cupplain flour
  • 1-2 tablespoonssweet chilli sauce
  • 1small white onion
  • 1 Cupthickened cream
  • Optional Extras for serving (only if you want)
  • I choose only a couple of these
  • Creme friache/ sour cream
  • Chives
  • Baby spinach
  • Semi dried tomatoes
  • Salsa (homemade to your liking)
  • Lemon Olive oil
  • Bacon
  • Halloumi

Steps

  1. 1

    Mix all ingredients together.

  2. 2

    Rest batter

  3. 3

    Cook on flattop on low heat in greased egg runs (if preferred) until golden brown on each side

  4. 4

    Finish cooking in a heated oven

  5. 5

    Serve with baby spinach, salsa, bacon, sour cream, chives and topped with extra sweet chilli sauce if preferred.
