Ingredients: 3 Cobs of corn; 1/2 Cup Semi dried tomatoes; 1/4 Cup chopped coriander; 3 eggs; to taste Sea salt and pepper; 1/2-1 tablespoon pesto; 1/2 Cup shredded parmesan; 1 teaspoon crushed garlic; 1/4 Cup SR Flour; 1 Cup plain flour; 1-2 tablespoons sweet chilli sauce; 1 small white onion; 1 Cup thickened cream; Optional Extras for serving (only if you want); I choose only a couple of these; Creme friache/ sour cream; Chives; Baby spinach; Semi dried tomatoes; Salsa (homemade to your liking); Lemon Olive oil; Bacon; Halloumi

Mix all ingredients together.

Rest batter

Cook on flattop on low heat in greased egg runs (if preferred) until golden brown on each side

Finish cooking in a heated oven

Serve with baby spinach, salsa, bacon, sour cream, chives and topped with extra sweet chilli sauce if preferred.
