Tonight I need to hydrate and get some fiber after a day of fasting. I wanted this soup to be light and simple as a starter. To make it thicker, just add a second leek or a large potato.

Tonight I need to hydrate and get some fiber after a day of fasting. I wanted this soup to be light and simple as a starter. To make it thicker, just add a second leek or a large potato.

Trim the ends off the leek and keep the green part if it looks good.

Wash the leek thoroughly, then slice it into thin rounds.

Heat the olive oil in a tall saucepan over medium heat. I used a stockpot.

Add the leek, salt, pepper, and mixed herbs. Stir and cook for 5 minutes.

Add a little water if needed to prevent sticking.

When the leek is soft, add enough water to cover and add the bay leaf. (Tonight I forgot the bay leaf.)

Cover and cook for 10 minutes.

Remove the bay leaf, blend the soup, and serve.
