Ingredients

2 loaves
  1. 2 cupsfine semolina (plus extra for shaping) (about 250 grams)
  2. 2 cupsall-purpose flour (about 250 grams)
  3. 1 teaspoondry yeast
  4. 1 1/2 cupswarm water (about 350 ml)
  5. 1 teaspoonsalt

Steps

    Mix the semolina, flour, yeast, and salt together.

  2. 2

    Gradually add the warm water.

  3. 3

    Cover the dough and let it rise for 1 hour.

  4. 4

    Punch down the dough, then divide it in half.

  5. 5

    Knead until you have a smooth, elastic dough.

  6. 6

    Place the dough on a kitchen towel sprinkled with semolina.

    Shape into two balls and roll them in semolina.

    Flatten each ball into a disk.

    Cover with a towel and let rise again.

    Bake at 400°F (200°C) for about 18 minutes.
