This is the traditional way we eat pork ribs at home, though we also prepare them in other ways that I'll share with you later.

Brush a baking dish (I use a clay one) with olive oil.

Slice the potatoes thinly (like for scalloped potatoes) and arrange them in the dish.

Slice the onion and add it on top.

Slice the bell peppers and add them along with the garlic cloves.

Season the two pieces of pork ribs with salt, black pepper, sweet paprika, and hot paprika. Drizzle olive oil over the top and spread it evenly with a brush.

Cover with aluminum foil and bake at 350°F (180°C) for 1 1/2 hours.

After 1 1/2 hours, remove the foil and bake for another 30 minutes.

After 2 hours total, take out of the oven and let rest for 10 minutes.
