Preheat oven to 180°C (160°C fan). Line a loaf tin with baking paper.

Wash apple, dice 2/3 and slice 1/3 for topping.

Melt butter, mix with sugar in a bowl.

Add eggs and vanilla, whisk until smooth.

Add flour, baking powder, cinnamon, and salt. Mix until just combined.

Fold in diced apple.

Pour batter into tin. Arrange apple slices on top.

Sprinkle sugar or cinnamon sugar over apples.

Bake 35–45 min until golden and a skewer comes out mostly clean.
Tips
For extra moistness, ensure not to overmix the batter and consider adding a splash of milk if the batter seems too thick.
