Ingredients

1 loaf
  1. 410 g(1 large, diced and sliced) Apple
  2. 120 gButter (melted)
  3. 120 g Brown sugar (or half brown/half white)
  4. 2Eggs
  5. 150 gPlain flour
  6. 1 tspBaking powder
  7. 0.5 tspCinnamon (optional)
  8. 1 tspVanilla extract (optional)
  9. pinchSalt
  10. 1–2 tsp Sugar or cinnamon sugar (for topping)

Steps

  1. 1

    Preheat oven to 180°C (160°C fan). Line a loaf tin with baking paper.

  2. 2

    Wash apple, dice 2/3 and slice 1/3 for topping.

  3. 3

    Melt butter, mix with sugar in a bowl.

  4. 4

    Add eggs and vanilla, whisk until smooth.

  5. 5

    Add flour, baking powder, cinnamon, and salt. Mix until just combined.

  6. 6

    Fold in diced apple.

  7. 7

    Pour batter into tin. Arrange apple slices on top.

  8. 8

    Sprinkle sugar or cinnamon sugar over apples.

  9. 9

    Bake 35–45 min until golden and a skewer comes out mostly clean.

Tips

For extra moistness, ensure not to overmix the batter and consider adding a splash of milk if the batter seems too thick.
