Prepare the Base : -

In a mixing bowl, take 1 cup Besan. Add chopped onions, crushed ginger-green chili, salt, turmeric, red chili powder, and coriander powder.

Make the Batter :-

Add water gradually and whisk it to prepare a smooth, medium-thick batter.

Add Rava :-

Now add the Rava to this mixture and mix it thoroughly.

Cover the bowl and let the batter rest for 15 minutes. This is important so the Rava can absorb the moisture and make the pudlas crispy.

Heat a non-stick tawa and grease it with a little oil. Pour a ladleful of batter and spread it evenly in a circle.

Cook on medium flame. Apply oil on the edges, flip it, and roast until both sides are golden brown and crispy.

Serve these hot and crispy pudlas with a bowl of fresh thick curd (yogurt) or tangy green chutney.
Tips
∆ Resting is Key :- Do not skip the 15-minute rest; it’s what gives the Rava the perfect texture.
∆ Consistency :- If the batter becomes too thick after resting (as Rava absorbs water), add 1-2 tablespoons of water to adjust.
∆ Extra Veggies :- You can also add finely chopped coriander or grated carrots to make it even more colorful and healthy.
