Ingredients

  1. Base
  2. 1/2 Cupwalnuts
  3. 1/3 CupAlmond meal
  4. 3 tablespoonscoconut oil (melted)
  5. 2 tablespoonsraw cacao powder
  6. 1 tablespoonsmaple syrup
  7. for the Caramel Filling
  8. 1 1/2 cupsdates
  9. 1/2 Cupcoconut milk
  10. 1/2 Cupcoconut oil
  11. 1/2 teaspoonHimalayan pink salt
  12. Chocolate topping
  13. 1/2 Cupcoconut oil (melted)
  14. 2 tablespoonsraw cacao powder
  15. 1 tablespoonmaple syrup
  16. 1/2 teaspoonHimalayan pink salt

Steps

  1. 1

    Line a 20x 10 cm (8x4 in) loaf tin with baking paper

  2. 2

    Base, place all the base ingredients into a food processor/Vitamix. Whiz until well combined, it will be a little sticky and crumbly.

  3. 3

    Press into the prepared tin and ensure it is pressed evenly.

  4. 4

    Place the tin the the freezer

  5. 5

    Caramel Filling, Using the food processor/ Vitamix (don't worry about washing it) place all the ingredients and whiz until completely smooth (it will take around 5 minutes)

  6. 6

    Pour the caramel mixture out the top of the base and return to the freezer.

  7. 7

    Chocolate topping, Using the food processor (again don't worry about washing it) add the Cacao powder, coconut oil and maple syrup, whiz until completely smooth

  8. 8

    Pour the choc topping over the caramel filling and shake the tin slightly to even it out

  9. 9

    Sprinkle with Himalayan pink salt if you like it extra salty
