Cut the potatoes into fries and gather your ingredients. (My chicken has a white edge because I defrosted it in the microwave.) The fillet should be about the size of your hand—ideally, not too thick.

Mix the salt, garlic, and soy sauce in a dish and coat the chicken fillet with the mixture. You can add more seasonings if you like.

Coat the chicken directly in fine breadcrumbs, making sure both sides are well covered.

Heat oil in a skillet (for the chicken) and in a pot (for the potatoes) for 5–7 minutes.

To check if the oil is ready, put in a potato fry—if it bubbles, it’s perfect for frying.

Fry the potatoes until golden and crispy. Drain on paper towels. Tip: Crispy fries float when they’re done because they’re fried in plenty of oil.

Fry the chicken in a little oil until golden and cooked through (use a fork to check—it should go in easily).

Serve the chicken and fries together on your nicest plate for extra enjoyment. The color is darker because of the soy sauce. Add any sides you like.
