In a saucepan, combine sugar and 40 ml water. Heat while stirring until sugar completely dissolves.

Pour 40 ml water over gelatin and let it bloom for 10 minutes.

Add bloomed gelatin to warm sugar syrup and stir until fully dissolved.

Add lemon juice.

Beat with a mixer about 5 minutes until light, fluffy, and white.
