This dish is a peurto rican traditional dish. I’m making mine with African cocoyam ! This is a protein I will be using along with black beans. All my ingredients in this dish are very nutritious, so you can eat this lasagna guilt free…. 🤭

Take your plantains peel and make slices the length of each one (3 slices so there’s 4 pieces of each plantain)

In a frying pan add oil to a medium high heat and fry the plantains until golden.

In a seperate pan of choice make one layer of the fried plantains. Fry the rest but set aside onto a seperate plate until ready to finish the layers.

Take the remaining oil there should be about 1/4c (if you need more oil add) all the chopped veggies,(leave some of the greens from the onions for top layer), seasonings, maggi, garlic fry 2-3 minutes. Add tomato paste fry for another minute and turn off the heat.

Remember to leave some of the green parts of the onions for the top layer*

Take the cocoyam and wrap in foil so no water gets in (I double wrapped) if using ground meat then brown your meat with salt n pepper and set aside. Boil your beans until very tender. Since I’m using the cocoyam I boil them in the same pot with black beans for about 45 mins.

When the cocoyam is finished let cool. Open the foil and OMG the Smokey smell is just amazing! Trust me😃. Add the beans and cocoyam or (cooked ground meat) to the fried spices and turn on heat and mix thoroughly. Fry for 2-3 minutes.

Now let’s finish the layers. On top of the 1st layer of plantains add half of the bean mixture then another layer of plantains and the last half of the bean mixture and the last layer of plantains.

Take the 4 eggs scramble in a bowl and add just a little bit of water and salt and pepper to taste. Slowly pour over all the plantains and cover. Cook on 160c or 325f for 30mins. Add chopped greens from the green onions and add to the top. Bake 5 minutes and all done. Let rest for 5 minutes and you are now ready to give your taste buds an amazing flavorful love story 🎉

Tips
Feel free to add cheese of choice to the layers. In some of my photos you will notice less amounts than what I have written. This is because I had unexpected guests and added more after I took the pictures. So please go by the amounts written except you are make half of the recipe.
