Ingredients

30 minutes cooking and 10 minutes preparation time
4 persons
  1. 1 cupcoarse semolina (Bombay Rava)
  2. 2 tbspoil, 2 tbsp ghee
  3. 1 tbsp finely cut French beans, 1 tbsp finely cut carrot, 1 tbsp green peas, 1tbsp green gram sprouts, 1 tbsp mothbeans sprouts, 1 small tomato
  4. 1 green chili,
  5. 1 dry red chilli,
  6. 1tsp grated ginger,
  7. For tempering
  8. 1/2 tsp mustard seeds,
  9. 1/2 tsp black gram dal,
  10. one pinch asafoetida,
  11. 2 curry leaves springs
  12. 1 level tsp salt or according to taste,
  13. 1/4 tsp sugar.
  14. 1 tsp lemon juice
  15. For garnishing few cashews, fresh grated coconut, and chopped coriander

Steps

30 minutes cooking and 10 minutes preparation time
  1. 1

    Heat pan, add 1 tbsp ghee roast cashews and remove.

  2. 2

    In the same pan add semolina and roast till golden color on medium flame. It will take approximately five to six minutes. Remove this in a plate.

  3. 3

    Now in a pan add 2 tbsp oil, heat the oil then add mustard seeds, black gram lentil, cut green chillies and cut red chilies, and also curry leaves.

  4. 4

    In tempering, add finely chopped French beans, finely chopped carrots and saute. Add both the sprouts, chopped tomatoes. Cook for five minutes.

    Now add 3 cups of hot water,when vegetables are cioked. Add salt and sugar.

  6. 6

    Add roasted semolina little by little while mixing continuously. Cover and keep covered for five minutes on low flame.

  7. 7

    Put off the gas and add lemon juice and a tablespoon of ghee. Mix well. Add chopped coriander leaves. Remove the upma in a serving bowl. Garmish it with fresh coconut, coriander leaves and fried cashew nuts.

    In a small bowl, keep cashews and grated coconut and chopped coriander leaves in the bottom. Put upma inthe bowl and press it with flat spoon.

  9. 9

    Demould the upma and serve with sliced lemon 🍋.

Tips

Roast semolina properly, add semolina little by little so it doesn't form lumps. Always serve hot, tastes better.
