It's a Maharashtrian and South Indian breakfast and snack recipe .

Heat pan, add 1 tbsp ghee roast cashews and remove.

In the same pan add semolina and roast till golden color on medium flame. It will take approximately five to six minutes. Remove this in a plate.

Now in a pan add 2 tbsp oil, heat the oil then add mustard seeds, black gram lentil, cut green chillies and cut red chilies, and also curry leaves.

In tempering, add finely chopped French beans, finely chopped carrots and saute. Add both the sprouts, chopped tomatoes. Cook for five minutes.

Now add 3 cups of hot water,when vegetables are cioked. Add salt and sugar.

Add roasted semolina little by little while mixing continuously. Cover and keep covered for five minutes on low flame.

Put off the gas and add lemon juice and a tablespoon of ghee. Mix well. Add chopped coriander leaves. Remove the upma in a serving bowl. Garmish it with fresh coconut, coriander leaves and fried cashew nuts.

In a small bowl, keep cashews and grated coconut and chopped coriander leaves in the bottom. Put upma inthe bowl and press it with flat spoon.

Demould the upma and serve with sliced lemon 🍋.
Tips
Roast semolina properly, add semolina little by little so it doesn't form lumps. Always serve hot, tastes better.
