Grease the cake tin with butter.

Melt 3 tbsp butter in the microwave and brush it all around the edges of the tin.

Sprinkle brown sugar evenly over the base and sides.

Arrange pineapple rings and cherries on top of the brown sugar.

Cream 200g butter with an electric whisk until pale and fluffy.

Add caster sugar and whisk until well combined.

Beat in eggs one at a time with the electric whisk.

Add 2-3 tbsp pineapple juice from the tin and mix briefly.

Gently whisk in self-raising flour until just combined.

Pour batter over the fruit in the tin and spread evenly.

Bake at 180°C for 30 minutes until golden and cooked through.

Cool slightly, then invert onto a plate to serve.
Tips
Using an electric whisk helps achieve a smooth batter, and adding pineapple juice keeps the cake moist.
