Mix miso paste, vinegar, sugar, olive oil, sesame seeds, ginger garlic paste, lemon juice, honey, and water to make the sauce.

Heat olive oil in a pan, add onion, zucchini, carrot, baby corn, broccoli, and red bell pepper. Sauté until the raw smell disappears.

Add salt and pour in the miso sauce. Stir well to coat the vegetables.

Taste and add soy sauce and red chili sauce as needed for spice.

Add cooked brown rice and mix until everything is well combined.

Garnish with fresh coriander and serve.
Tips
Sauté the vegetables until they are tender but still crisp for the best texture.
