In a microwave safe container, warm up the milk and water slightly until temperature is around 100-110°F. Stir in honey or sugar to dissolve and add active dry yeast. Stir gently to combine and let sit for a few minutes.

In stand mixer with dough hook attachment, add flour and salt. Turn on mixer to combine. Add milk and yeast mixture and allow the dough to come together. Add in softened butter or oil. Let the mixer knead the dough on medium speed for 5 minutes.

Take out dough ball and lightly grease the bottom of the mixer with oil. Cover bowl with towel and place in a warm place to rise for 1-2 hours. Once dough has doubled in size, punch dough ball down and work on a lightly greased surface.

For dinner rolls, form small dough balls around 2 inches in diameter, approximately 16 balls. Place onto a greased or lined baking sheet, cover with plastic wrap or towel, and let rise for 30 minutes. Brush with egg wash or mayo. Bake at 350°F for 20 minutes.

For cinnamon rolls, roll out dough into a large rectangle. Spread 1/4 cup softened butter onto dough, and sprinkle with about 3/4-1 cup brown sugar. Dust with desired amount of cinnamon. Cut dough into 12 equal strips and roll up tightly and place into greased baking dish. Cover & let rise for 30 minutes. Bake at 350°F for 20-25 minutes. Top with cream cheese icing while still warm.

Quick cream cheese icing: mix together 1/4 cup softened butter, 4 oz cream cheese, 1 tsp vanilla, and 2 cups powdered sugar.

For pizza crust, generously coat work surface with semolina flour and divide dough into two parts. Roll out into a large circle about 12"-14" in diameter. Top with desired toppings and bake on preheated pizza stone at 450°F for 15 minutes. Brush crust generously with garlic butter after baking.

For bagels, form 12 equal sized dough balls and use your finger to poke a hole in the center. Gently stretch to make the hole larger. Cover and let rest while you prepare the baking soda bath. In a stock pot, bring to boil 2 quarts of water. Add in 1/2 cup of baking soda and stir. Drop bagels in 2-3 at a time and cook each side for one minute. Dry on towel, place on greased baking sheet, brush with egg wash or mayo, top with desired toppings, and bake at 350°F for 20 minutes.
