Dice the onion, garlic and one tomato (keep the tomato separate)

Add butter, garlic, and onion to a pan and heat for a few minutes until fragrant (don't let the onions brown)

While that cooks, in a separate bowl mix the beef mince, chili powder and paprika powder

Add the beef mince to the pan and cook on medium heat for a few minutes until it starts to change colour

Add tomato paste, diced tomatoes and salt

Add the water and cook until the beef is fully cooked or the water has evaporated

While waiting for the beef to cook, dice the second tomato, lettuce and grate the cheese

Once the water has evaporated and the beef is ready, turn off the heat. In a separate pan, heat some oil and place the tortilla down for a few seconds until golden brown on one side.

On half of the tortilla add grated cheese and then add some of the beef mince on top. Then add the lettuce and diced tomato. Then fold the tortilla in half and take out of the pan to serve.
